Chef Dan Bauer offers familiar tastes with a traditional twist. Fine steaks are aged 28 days and prepared to your specification. Filet, Kansas City bone-in rib eyes and American Kobe strip loin are among the finest cuts of meat and may be ordered Oscar or au poivre. Favorites from lobster and king crab to New York steak can be paired with must-haves, from sea-salt-crusted baked potatoes to tempura onion petals and creamed corn with a kick.
Oysters Rockefeller can be served “classic rock” or “progressive rock,” fruits, vegetables and seafood are hand-picked for freshness and arrive from various seasonal locations, and tableside dishes range from classic Cesar to shrimp scampi and steak Diane to bananas Foster and café diablo desserts.
Fine wine beckons the visitor, and Sommelier Christian O'Kuinghttons, a pairings expert, maintains more than 1,750 bottles in prominent displays beginning at the entry with a magnificent glass cabinet along the spiral staircase leading to the restaurant. Master Mixologist Erik Tirums pours classic cocktails, from Cosmos to Mint Juleps and Vespers to Hemingway Daiquiris with 10 Cane Rum, fresh-squeezed lime and grapefruit juice.
